Dear Sir:

Your favor of Sept. 25th has been received. In your letter you do not state what your process of manufacture is. If it is improved Machinery, I would like to have a description of it. But if it is yourself, and I have to depend upon your own presence and labor to make such Flour as you describe, there would be difficulty in having you answer my purpose, as I have a number of Mills and they are in different places. We have excellent Millers here, and have as good Wheat as any produced in North or South America, and there is nothing now to hinder our making as good or better flour here than is made in St. Louis; if our Millers would be careful. There have been many causes which have operated to keep down the character of our Flour, aside from the skill of our Millers or the quality of our Mills.
